L'Atelier du Miel is distinguished by a unique honey production method that relies on moving the beehives all year long to follow flower blossoming seasons, and by doing so allowing the bees to feed only on nectar of flowers and honeydew of trees.

In a yearly cycle, beehives pass by the Cedar trees in Barouk, Oak trees in Keserwan, Medlar trees in Saida, Orange trees in Tyre and Akkar, Cherry trees in Zahle, Peach and Apricot trees in Rechmaya, Hawthorn and Wildflowers in Kab Elias, and Thorns in Ain Dara.

Oak - A mildly sweet honey from the virgin forest of Keserwan’s Shouwen Valley ** Harvested April - June 2018
 
Citrus - A Zesty sweetness from coastal Akkar’s citrus and wild spring flowers  ** Harvested March - May 2018

Banana - An intense honey from Tyre’s Sarafand coastal plain  ** July - September 2018

Thyme - A full-flavored and subtly sweet honey from the thyme flowers of Anfeh’s coastal meadows  ** Harvested July - August 2018

Clover - A medium-sweet honey produced at 1800m in Tannourine’s biodiverse mountain meadows  ** Harvested May - June 2018

Thistles - Thick with aromatic floral and woody notes. From the thistles blossom and cedar trees that carpet Tannourine’s mountain tops  ** Harvested July - September 2018

Cedar - A thick and woody honey from the fir and thistles of northern Lebanon’s high forest ** Harvested July - September 2018

Eucalyptus - An aromatic and sweet honey from the eucalyptus and wild flowers of the Beirut Forest area  ** Harvested March - July 2018
